Having just spent a month back in California (home of the cheap, delicious, and massive burrito), I&#8217;m now finding myself in the tricky position of craving a burrito in London. Typically, I&#8217;d just eat something else. Job done. But, on tail end of my trip I discovered the joy of the chili relleno burrito. And not only that, but I became a convert to the wet burrito as well. So now I just can&#8217;t think of anything else. Burrito joints in England are not uncommon, but while investing £10 on an average-at-best burrito might temporarily satisfy my burrito-lust, I&#8217;m much more of a &#8216;DIY&#8217; and &#8216;do it properly&#8217; person. So, I built one&#8230;<br />

Chili Relleno Burrito (Wet)<br />
Serves 2-4, depending on desired size of burrito<br />
<br />
Chili Relleno:<br />
2-4 Poblano Peppers<br />
1 1/4 Cups Cheddar and / or Mozzarella Cheese (Shredded)<br />
1/4 Cup of Onion<br />
2 Eggs<br />
Sunflower Oil (or comparable)<br />
<br />
Enchilada Sauce:<br />
1 Large or 2 Medium Tomatoes (Diced or Blended)<br />
2 Tbsp Chili Powder<br />
2 Tbsp Cumin<br />
1/4 Cup of Sunflower Oil (or comparable)<br />
1/8 Cup of Water<br />
2 Tbsp Flour<br />
Pinch of Salt<br />

Flour Tortilla:<br />
2 Cups Flour<br />
1.5 Cups Warm Water<br />
2 Tbsp Butter<br />
2 Tsp Baking Soda<br />
Pinch of Salt<br />
<br />
Tortilla<br />
Mix together the flour, baking powder and salt in large bowl. Add in butter (not melted) slowly, or spread out pieces throughout the bowl and mash to resemble texture of polenta. Next, add warm water slowly, mixing with your hands (or a fork) as you add. You may not need all of the water. Once you have reached desired doughiness, knead on floured surface for 2-5 minutes and divide into 2-4 pieces. Let sit for a few minutes and roll into very thin tortillas. Cook on a large frying pan or baking sheet until tortillas begin to bubble. Leave stacked, covered.<br />
<br />
Enchilada Sauce<br />
Dice your tomatoes, or stick in a blender. Heat saucepan, add Oil, Flour, Cumin and Chili Powder. Mix until consistent, then add in Tomatoes and water. Stir again until mixture is a consistent texture, and a brownish red color. Let sit on low heat, stirring periodically.<br />

Chili Relleno<br />
Preheat the oven to 190&#8242;C. Cut peppers open being careful not to slice all of the way through and remove seeds. Stuff peppers with cheese and onions and place on an oiled baking sheet. Whisk together the two eggs into a batter (you can add water or flour for a thicker or thinner consistency), and pour over the Chili&#8217;s. Bake until eggs are cooked and cheese is melted.<br />
<br />
To compile the burrito, place the Chili Relleno&#8217;s onto the tortilla, fold ends over (front and back first, then sides over that). Pour enchilada sauce over the folded burrito and garnish with beans, green onions and sour cream.</p>

Something happened this past year in design, and I&#8217;m a fan. Maybe it has something to do with all of the gloom of a poor worldwide economy, or the realization that our own influx of once-upon-a-time-youth, Japanese-video-game-culture influenced demographic are suddenly a legitimate wave of new consumers. However it shakes out, the trend in branding in 2011 seemed to be bold, colorful, sleek, simple design. Either way, I&#8217;ve been banging on about the joys of using color as a branding tool, and I&#8217;m quite pleased to see that it&#8217;s happening in all industries; from insurance, to laundry detergent, to the olympics, and so forth. My personal favorite from 2011 though has to be the São Paulo logo, which has all of the energy of a great brand and absolutely none of the logic or cleverness.</p>
